Apparently, it is quicker to make some scones than to go and buy them from the shop… depends how close your shop is! These are pretty quick to make though – the secret is the food processor (if you haven’t got one, either buy one or go down to the shop to buy some scones).
WARNING: This cake contains a bit of sugar. You could leave it out to make them suitable for babies over 6 months.
Ingredients
- 450g self-raising flour
- 115g unsalted butter
- 50g caster sugar (optional)
- 225ml milk
Method
- Use a food processor with the metal cutting blade.
- Rub together flour and butter (i.e.: put them in the blender together for a minute or so) until the mixture resembles breadcrumbs.
- Add sugar if using and whizz.
- Pour in milk and whizz again until the mixture comes together in a uniform dough.
- Put the oven on at 180C.
- Be careful to handle the dough as little as possible.
- Tip the dough out onto a floured surface and roll it out to about an inch thick.
- Cut out into circles – should make about 15.
- Lay out onto baking trays lined with grease-proof paper.
- Cook for 12 minutes.
Serve wih butter and jam or jam and squirty cream…
