Healthy Banana Cake

WARNING:  This cake contains nuts, it is therefore not suitable for babies.

Ingredients

  • 2 large ripe bananas
  • 250 ml orange juice
  • 300g self raising flour (half white/half wholemeal if being ultra healthy)
  • 125g brown sugar
  • pinch of salt (can get away without salt if you prefer)
  • ½ tsp of mixed spice and cinnamon
  • 1 egg
  • 1 tbsp sunflower oil

Method

  1. Set oven to 170 degrees, lightly oil a 2lb cake/loaf tin
  2. Mash bananas together with orange juice
  3. Mix together the flour, sugar, salt, spices and walnut pieces
  4. Add the banana juice mixture together with the egg, oil and combine together
  5. Spoon into the cake/loaf tin. Bake for approx 1 hour. Check the cake is done by inserting a metal skewer or knife into the centre. If it comes out clean remove cake from oven and leave in the tin to cool.
